When you ingest sugar/carbs you raise your glucose levels too high and under these conditions protein combines with sugars and the Maillard reaction takes place. It leads to the subsequent inflammation of every tissue, artery and organ in the body (Glycation).
The reason why sugar/carbs raise your glucose levels high is because there is a limit to how much sugar can be in the bloodstream at one time. That limit is 4 grams of glucose which the body produces from gluconeogenesis using various compounds found in meat. Unlike Animal Fat which has plenty of lipoproteins to traffic animal fat around the body, there are no transporters for dietary sugar. It dissolves in the blood as a way to clear it from the bloodstream and it causes many disastrous effects such as glycation.
I seriously don’t understand how we have this multitude of technology, doctors and scientific papers and we aren’t able to make a simple realization. Our body though incredibly resilient is not meant to consume carbs/sugar and will constantly break down well short before the minimum age we should be reaching, which is 125 years old.
Now I don’t believe in something as crazy as people will typically throw out there, that the almighty “they” wanted everything to be like this because if you look at the people at the top they are fat and unhealthy just like everybody else. I believe we can chalk this up to just ignorance, incompetence and greed. We’ve invested so much into this through agriculture, companies mass producing it and ingrained it in our minds that this is food that to challenge that narrative is something people aren’t even thinking of doing.
However, here’s the thing we HAVE to challenge it. 70% of the US population is overweight, we’re constantly dealing with dental issues and everyone has some form of atherosclerosis progression along with pre-diabetes/diabetes. There is no reason we should ever let one kid die from atherosclerosis as many have. The current way of eating is just not working and at the end of the day, people can’t be at peace when they are in pain. I’ve felt the difference of what I feel like in ketosis eating just meat compared to eating carbs/sugar. They are slowing us down, limiting our potential and cooking our bodies until they can’t heal anymore!
